Prep Time: 15 min.
1 C red seedless watermelon, ½” cubes
1 C yellow watermelon, ½” cubes
16 whole pitted kalamata olives, drained
¼ C crumbled feta cheese
¼ C fresh Africa blue basil leaves (or any fresh basil), julienned
½ tsp. smoked salt (available at gourmet food stores, or call our chef!)
2 tbsp EVOO
Fresh ground black pepper to taste
Combine watermelon, feta cheese and basil in bowl
Gently toss, being careful not to break up the watermelon
Let set for 5 minutes
Plates on a chilled plate
Drizzle EVOO. Pepper to taste.
Garnish with kalamata olives
